The People
David Shimron, Adv. – Chairman of the Board of Directors
"I love good wine, although wine making is not my field, my responsibility includes determining the winery's policy, selecting the right people, and making the best important management-related decisions. However, we are not talking solely about business involvement, as The Ella Valley Wineries are different from the various numerous projects I am involved with. This is a project with a lot of soul, beauty and depth."
"The task I was assigned was ‘to produce the best possible kosher wine.' After examining all the possibilities, I realized that there was only one way to achieve this - by starting from scratch: selecting the land, planting the vineyards, building a winery and making the wine. Each year, I am convinced once again that this was indeed the right way..."
Danny Valero - General Manager

Danny is a resident of Mevasseret Yerushalayim. He holds an MA in philosophy from the Hebrew University of Jerusalem, and learned about vine growing in the Napa Valley, California. Danny loves animals, collects rare birds and has a herd of horses. He also likes to take apart, put back together and ride Harley Davidson motorbikes.
How I Became Involved in This Project
"When the project for the winery was in its very early stages, I was asked to take on the responsibility for its realization. I started taking an interest in the subject, fell in love and got sucked into it. I travelled to the Napa Valley, California, in order to learn from the best, and I returned home to locate the best growing area, to plant the vines and to build a winery."
My philosophy
"Paying attention to the slightest detail, without compromising, and doing everything with the utmost seriousness, out of genuine love and connection. Wine making is a very unforgiving field. It recalls every mistake made along the way. This is why we put so much work and thought into the vineyards, as excellent wine calls for excellent grapes."
Udi Kaplan - Winery Manager

Udi lives in Srigim, a community settlement in the Valley of Ella. He is a graduate of the Hebrew University's Political Science department. His main hobby is bike riding, on the road, but mainly along tracks.
How I Became Involved in This Project
"I knew Danny from our days at the university. Our relationship deepened when I moved to the Valley of Ella, at the time when Danny was planting the vineyards. My experience in management was in the field of real-estate, and Danny suggested that I manage the building of the winery. This involved learning how to build a top-quality winery, a convenient site from which to manage the project. This was supposed to be a short-term project, but in the course of the work, I fell in love with the entire subject of wine and decided to stay and manage the winery. Each day that goes by, I am grateful for this decision."
My Philosophy
"In my view, a good quality of life involves the right balance between personal life, professional life, and the area of residence. The exact same thing is true about wine: the right balance between the ingredients, the quality of the product and the area - this is the secret of our success."
